From pineapple guac to dairy-free pineapple ice cream, enjoy these healthy, refreshing and easy-to-make pineapple recipes.

Pineapple Guacamole
3 Avocados, ripe
1/4 cup Cilantro, fresh leaves
1 Jalapeno
1 1/2 cups Pineapple, fresh
1/2 cup Red onion
1 tbsp Lime juice, fresh
1/2 tsp Sea salt, coarse
1/4 cup diced tomato

Throw all the ingredients in a bowl and mash everything together with a fork to your desired level of chunky-ness. (We like ours pretty chunky!) Don’t be afraid to mash up the pineapple a bit too, so that the juices infuse the guac. Yum.

Frozen Pineapple Margaritas
5 cups frozen pineapple chunks
3 cups ice 1 cup tequila
⅔ cup lime juice
½ cup Triple Sec
1 tablespoon honey

Blend ingredients together in a blender for a classic-style frozen margarita – without all the sugar. Bonus points if you serve inside a pineapple boat.

Healthy Pineapple “Ice Cream”
2 cups frozen pineapple
1 medium banana
1/2 cup coconut milk

Place your coconut milk in the freezer upside down for a few minutes. (You want to use as much of the cream as possible and this will help separate the cream from the milk.) Combine ingredients in a blender or food processor and blend until smooth and creamy. Serve immediately as soft serve ice cream, or freeze 20-30 minutes for a more firm texture.

Pineapple Cucumber Salad
1 pineapple, chopped
1 cucumber, chopped
2 limes, zested and juiced
⅓ cup cilantro, roughly chopped
Himalayan pink salt and pepper

Toss the ingredients in a bowl and serve!
